Keto Friendly Immune Boosting Crockpot Roast and Veggies

Monday is usually a pretty busy day around here. Besides homeschool, we also volunteer at a Pregnancy Center for a couple of hours in the afternoon. We love it but it leaves us exhausted and I don’t feel like cooking.

So…this is designated “Roast in the Crockpot” day in our house. I really don’t like just regular Roast and veggies every single week, plus cutting out potatoes now, so I experiment every Monday. Different veggies. Different spices. Different flavors.

Tis the season for colds and flu so we concentrate on immune boosting foods this time of year. No flu shots please. We spend lots of time boosting our immunity and practicing standard precautions so there is no need.

Now, it looks like there are a more carbs in here than I would normally like BUT they are kind of spread out which means the serving size doesn’t have as many carbs as the total pot if that makes sense. When you deduct fiber, etc to get net carbs it really isn’t high in carbs at all.

Ingredients

•Beef Choice Chuck Roast (mine was 2.1 lbs)

•1 cup Organic Beef Broth (would have preferred Bone Broth but grabbed wrong one)

•Pink Himalayan Sea Salt (to taste)

•Black Pepper (to taste)

•1 tbsp. Balsamic Vinegar

•3 Tbsp. Coconut Liquid Aminos (can use regular Liquid Aminos if nut allergy but be aware that it contains soy)

•medium yellow onion (it is higher carb so I used less than half)

•16 oz. package of mushrooms (size/style to preference)

•16 oz. cut and peeled organic baby carrots

•2 cups water

•crockpot

Directions:

•Season Roast with salt/pepper and place in crockpot

•Chop onion and add to crockpot along with carrots and mushrooms

•Add aminos, balsamic vinegar and water

•Cook on low 10 hours (this makes roast super juicy and literally melt in your mouth). Mine automatically goes to the warmer setting because it may be 12+ hours before we eat it.

•Serve up in bowls to get some of that yummy broth.

*The hubby did request more vegetables. Something green like green beans or broccoli since he isn’t eating potatoes. So I will try it next time. Otherwise BIG hit with the whole family!!*
