I always try to keep chicken on hand for the long days when I don’t want to cook much. Bake, Instant Pot or let hubby grill and BAM! Under an hour! My spice collection is also growing and it keeps us from getting burnt out on the same things over and over.
Today we decided to hop the pond and go with one of our new favorite Mediterranean Greek Blend spice mixes with ZERO carbs. This recipe is 3 simple ingredients!
Being a Kentucky girl I ALWAYS buy Perdue or Harvestland chicken. Very rarely does it get recalled or get yellow or slimy 🤢 I can’t afford organic meat all the time so to me this is the next best option.
•2 lbs. Harvestland chicken tenderloins
•Mediterranean Greek Blend spice (available at most health food stores or Amazon)
•Preheat oven to 400
•Coat chicken with Avocado oil (I eyeball amount–just don’t drench it)
•Cover chicken with the spices. Somewhere around 1/4 cup total
•Bake for 30-40 minutes until chicken is no longer pink and juices run clear
