One of our biggest concerns with Keto was losing out on a flavorful pizza. Prior to this the Neurologist had us try Gluten-Free. It didn’t go well 🤢
I stumbled upon a recipe for Garlic Breadsticks and tweaked it a little (nothing unusual for me). The WHOLE family loved these!!
Ingredients:
•1 1/2 cups shredded mozzarella cheese
•1 egg
•2 tbsp. coconut flour
•1 tbsp. heavy cream
•1 tsp. garlic salt
Mediterranean Greek Mix butter
•1 tbsp. Kerrygold butter
•1/2-1 tbsp. Mediterranean Greek Blend spice
•Mix well. Set aside.
•This is optional. You can just use garlic salt and butter to taste.
Directions:
•Preheat oven to 350 degrees
•Melt cheese in microwave. Start with 30 second intervals. Stir. Continue until done. It took one minute for mine in a glass bowl.
•Add egg, cream and coconut flour with metal spoon and stir/cut in ingredients.
•Knead the mix in the bowl until all ingredients mixed in.
•Roll out “dough” between two pieces of parchment/wax paper until thin or desired thickness (we prefer thin)
•Using a pizza cutter, slice into “sticks”
•Flip over onto another sheet of parchment/wax paper and set on baking sheet.
•Cook for 12-15 minutes or until browned
•Brush butter blend on while hot
•Wait until cool to remove from parchment/wax paper to avoid tearing.
Enjoy!! This also makes an amazing pizza crust! Just add toppings and cook (recipe coming soon)
