Keto(ned) Pumpkin Power Balls

These were originally called Energy Balls but my little one called them Powerballs and the name stuck 🤣

Eating good fats is an important component of any Ketogenic lifestyle especially for maintaining energy, working towards Keto adaption and getting your fats in for the day.

Many people look at any food change, I really don’t like the word diet, and think of all they have to give up. This is the most common myth and it’s just no longer true. We have so many great chefs, farmers, entrepreneurs and culinary artists making many substitutes and yummy dishes these days. Sometimes the swaps even fool you.

I’m an uber busy, always on the go mom. Even when I’m home I’m either working on business, homeschool, researching or studying. I need something quick during those slump times. I also only eat a very small breakfast and I want it to count. Enter these yummy “Powerballs”

Ingredients:

1.) 1 cup nut butter (watch your carbs on this–almond or cashew works well. I used the organic Smucker’s peanut butter which has less carbs than traditional)

2.) 3 tbsp. Coconut flour (2-4 to texture-you can find this on Amazon)

3.) 1/4 tsp. vanilla extract

4.) 2 tbsp. Swerve granular sugar (you can find this on Amazon)

5.) 2 tbsp. pure pumpkin purée (make sure the only ingredient is pumpkin) 6.) 1 tsp. pumpkin pie spice

Directions:

1.) Mix all ingredients together in bowl

2.) Roll into balls

3.) Place on parchment paper lines baking sheet.

4.) Refrigerate for 20 minutes then enjoy! If you have leftovers keep them in a sealed container or baggie in the fridge!
